The aim of the project is to prevent the occurrence of unwanted malolactic fermentation (FML) in sparkling wines and to test possible precautions to minimize their occurrence.
To achieve this goal, this pilot test is being carried out which aims to obtain as a result a new procedure that does not exist so far as to prevent the development of unwanted FML in sparkling wines.
The project will consist of testing through analytical and microbiological monitoring of bottles of cava from different batches where the problem of carrying out the unwanted FML appears, including batch control bottles where there is no problem.
